Porringers and Bain Maries

A Porringer or a Bain Marie are used when you need a gentle even heat to melt butter or chocolate or to make a sauce without lumps caused by heat spots in the pan.

By placing water in the lower pan of the porringer, the steam created gently and evenly heats the upper pan. A bain marie works on the same principle but would be used in conjunction with an existing base pan.
